I CAN'T EAT DAIRY.
Did you already know that? Maybe. And when I say "can't" I should really say "shouldn't," because I actually do eat it. But, if I eat too much, it makes me sick. Boo. It's an intolerance - not an allergy - so I justify eating it that way! Ha ha. There are several things I will cheat for: a Wendy's frosty, ravioli and a beefy 5 layer from Taco Bell. On an every day basis, though, I don't eat it. At my house, we drink soy & almond milk, eat dairy free cheese & butter, and ice cream is replaced with sorbet. It's a pretty simple life style change, really. You get super used to it {yes, when I first tried soy milk I wanted to BARF, but it's so good now, I honestly don't remember the taste of cow's milk!}.
The hardest part about being dairy free is the lack of yummy treats. It's not that they aren't out there, it's just that I don't ever make them! I do have a Dairy Free board on Pinterest, though, loaded with scrumdiddlyumptious treats I could make dairy free {you can follow it HERE}. I've learned over the years that it's pretty simple to substitute dairy free ingredients for "normal" ones to make most recipes dairy free - and they taste about the same - if not better!
Growing up, my oldest sister would make Magic Cookie Bars, and they were seriously MY FAVE. Think coconut...chocolate...more COCONUT...more CHOCOLATE...YUM! But I've never made them in my adult years, because one MAIN ingredient is sweetened condensed milk, which is a GIANT NO NO if you can't eat dairy. UNTIL NOW! I made > homemade dairy free sweetened condensed milk < that changed the way I look at baking & desserts! These Magic Cookie Bars are 100% dairy free - and 100% DELISH.

ReplyDeleteIt's in most stores! It doesn't always brag about being dairy free, but if you check the "healthy" butters - most of them are made with oil, so they don't have milk in them. Earth Balance is the brand I always get. It's a harder consistency than regular butter, but they do make a "whipped" version that is smoother, and you can just zap it for a min in the microwave to soften it up. Have a great week! xo

I love Earth Balance too. Tastes just like real butter. I haven't tried baking with it though, but I will now!

ReplyDeleteThat looks sooo good!! Kind of reminds me of a samoa cookie! I'm the same way with gluten. I have an intolerance to it, but not to the point like people with celiacs. It's pretty challenging avoiding gluten O_o lol! I think I could make this GF too...I'll have to see if I can come up with a graham cracker alternative. Thanks for sharing!! :)

ReplyDeleteNice! My husband has a dairy intolerance too, but sadly LOVES all thinks dairy. It has been a struggle to remove it from our diets. Little tricks like this make it way easier though! Thanks for sharing this recipe!
ReplyDeleteYUM. I love samoas - I may have bought way too many boxes last month from the girl scouts. :) My sister has celiac disease and makes the most delicious things. She is the sister I'm referring to in the post that used to make these magic cookie bars - but she made them gluten free! She just used a GF graham cracker. It should work pretty much the same. Maybe add a little more butter to help hold it together! It's so much easier in today's world to be allergy free than it used to be. Take care!! xo
